My favorite pea soup

Spring is fast approaching, and although it may not be harvested fresh green peas yet you can still enjoy the taste of a green pea soup. One of my favorite soups of all time happens to be pea green topped with perhaps a sprinkle of cheese or some garlic flavored croutons. This soup provides a family with a refreshing lift, as well as a quick way to prepare an unusual outline. It is also great when used as the main course of an evening meal.

To make this fabulous soup you will need to accumulate the following ingredients.

3 tablespoons butter
1 teaspoon onion powder
3 cans of peas and green gardens
1 can chicken broth
Salt and pepper to taste
Shredded cheddar cheese (optional)
Croutons (optional)

Start the green pea soup by choosing a medium saucepan and melt the butter over a low heat. Add the teaspoon of powdered onion and continue to cook the mixture of butter. Make sure you mix the butter and garlic or you risk burning. Stir until butter has melted completely, which should be anywhere from 2 to 3 minutes. Add 3 cans of green peas, chicken broth and 3 cups of water. Bring the mixture to a slow boil and reduce heat. Boil the peas for ten minutes, when you take an emulsifier and dunk in the frying pan several times. If you do not have an emulsifier, you could use a blender. Simply working in small batches and the content of soup of puree. You should see the soup to thicken at this point. Continue to cook until the remaining pieces of the peas are tender and the soup has achieved the desired thickness. If the soup becomes too thick, you can always further diluted with some water or chicken broth, if available.

When you finished your soup can be served in a large bowl and topped with shredded cheddar cheese or some garlic croutons. Lacking the toasted bread you could make toast and slice it into small portions, one half of an inch. A little garlic butter on toast adds a fresh flavour to your soups and contributes to a wonderful meal. Another popular substitute is to add a little milk instead of water in case you would like a creamy soup.

The family is sure to enjoy this quick meal and think you've spent hours working on the stove to prepare for them.
