All about sweet potatoes

Yams are often mistakenly referred to as sweet potatoes, but these tasty tubers are quite different and available in more than 150 different varieties of the world. The sweet potato, sweet true Yams also have a higher moisture content and can grow to lengths of more than seven metres, well over a hundred kilos of weight.

Although the potatoes were widely popular in counties throughout Latin America, the Caribbean and Africa for a few hundred years, only now are becoming more popular in the United States.

Yam and chicken soup recipe

What you need
2 pounds (about 6) yams, peeled, sliced red onion 1 inch cubes1, coarsely chopped1 clove of garlic, coarsely chopped1 minced3 carrots, celery rib, coarsely chopped1 spoon fresh Bay leaf1 thyme1 1/2 quarts chicken broth, homemade and freshly ground pepper and cannedSalt taste6 tablespoons flat leaf sprigs of parsley yogurt6 plain, finely chopped

How to Make It

In a large soup pot, combine the potatoes, peeled and diced with red onions, garlic, carrots, celery, bay leaf, thyme and chicken broth and bring to a boil over medium heat. Cook the mixture over low heat for 25 minutes or until all the sweet potatoes are tender.

Remove the bay leaf and discard from the mixture.

Using a blender or food processor, puree the soup mixture until smooth in small batches and then re-add the dish.

Season soup with salt and black pepper to taste and let simmer for 15 minutes.

Garnish each serving with a few dollops of plain yogurt, followed by finely chopped flat leaf parsley. Serve the soup hot or yam while chicken at room temperature.
