Braised soup with vegetables and oodles of noodles

I made brasato two days ago. All in the family loved it. This one-pot meal turned into two meals. After the meal second still had a small piece of roast and some leftover sauce. Instead of discarding the food that I made a batch of soup.

Diced meat and sauce were at the root of my soup. I added chopped onions, celery and carrots for the flavor. I also added frozen peas and corn. After the soup is cooked for a few minutes I realized that he needed more water. The amount of water depends on how much you let sauce and the size of vegetables. If the soup is too thick, add more water.

Any type of pasta would work with this recipe. You can use Ditalini (pulp-sized tube) or Tubes (small tube) or star. Elbows are also appropriate. The dough will thicken the soup.

The meat has been cooked, so you don't need to simmer this soup is very long. As soon as the carrots are tender and pasta soup is made. Served with sourdough bread store-bought, fresh from the oven. Garlic breadsticks are another option. Summer fruit, juicy cherries-red and green grape or watermelon-complete one-pot meal thi.

Ingredients

2 tablespoons olive oil
1 yellow onion, peeled and chopped
2 cups of leftover pot roast, cubed (more if you have it)
1 cup of leftover sauce
4 cups of water (or more)
3 tablespoons soup with beef
2 stalks celery, chopped
6 medium carrots, peeled and chunked
1 cup frozen petite peas
1 cup frozen corn
2 cloves garlic, chopped
Salt and pepper to taste
Paste tube 1/2-3/4 cup

Method

Pour the olive oil in soup kettle. Sauté the chopped onion in oil until soft. Add pot roast, salsa, water based soup, celery, carrots, peas, corn, garlic, salt and pepper. Cover and simmer for half an hour. Add pasta, cover and cook 15 minutes, or until the pasta is tender. If necessary, correct the seasoning. Makes 8 servings.
