I love soups and soups, is to love stocks. A soup is essentially a stock with things added to it. Not everyone, but many stocks are based on the bone marrow. In other words, we use the bones for making stock and what comes out of them is the medulla. Another thing is gelatin made from bone marrow and a rich bone stock is also rich in gelatin, and will congeal when chilled. If one makes a super rich stock, contains enough cord so that mold. And this is the secret behind the gelatin.
An aspic is made by pouring a Commons highly gelatinous into a mold, adding treats it as ham pieces of veal, mushrooms and truffles, perhaps even and chilling it. It was served (I suppose) on a bed of ice covered with leaves of lettuce, or something to hide.
Aspic have been around forever, but that have not been popular all over the United States in over 40 years. In fact, most people find them disgusting (but I bet that those same people have no trouble eating ' jello '). With the advent of refrigeration and fancy cocktail party, aspic were a great success in the 1950s.
Personally, I think Aspic disappeared simply because they were just too damn hard to do. First, the stock had to be impeccably clear; one simply could not serve an aspic cloudy. In addition, it is very difficult to calculate the gelatinous contents of a Commons, because even if you use the same amount of bones, there is bound to be variability in the amount of bone marrow in the bones. The aspic should also be prepared in advance, the day before and finally often failed when released from the mold and broke in half.
Aspic is tasty and beautiful, but more than that it was a badge for the cleverness of the chef in the culinary arts. The 1960s saw a large reduction in snobbery and showman, and we have not seen the aspic from.
