What you need

1 pound Split yellow peas6 cups water1 1/2 tsp diced onion2 salt1 medium diced Garlic cloves2 cups diced smoked ham celery2 hocks1 lean pound boneless diced marjoram1 pork1/2 teaspoon/2 teaspoon pepperPrepared thyme1/8 teaspoon mustard

How to Make It

To prepare the yellow split peas that you need to soak in water for 6 cups or more to cover the peas. Let them sit overnight in a large Dutch oven or stewpot.

Pour out the water the next day and add more water. Turn the heat to high and bring to a boil. Cover and cook for about 2 or 3 minutes. Turn off the heat. Allow the beans to rest, covered with a lid for 1 hour.

Pour off the water and add enough water to cover the beans. Return to a boil and then add the onion, diced salt, garlic cloves diced, diced celery, smoked ham hocks and boneless pork cubed.

Cover and reduce heat to lowest setting. Simmer on low heat for 1 to 1 1/2 hours or until beans are tender and the meat is done. Mix two or three times towards the end of the hour to reduce the burning and burning. Add more water if necessary.
