There is more than a kitchen in Bolivia, because every region has its own favorite dishes. Food tends to be spicier than West of the country, where the arid valleys of the Andes from the Plains to the East. Bolivian food is similar to the Peruvian cuisine, somehow, because these countries share a border as well as similar topography.
There is a lot of varieties of cereals, vegetables and fruits in the tropics, which are to the North and East of Bolivia, since this is the agricultural centre of the country. Most cattle ranches are in the East. You can imagine how differences in altitude, topography and climate mean that the food eaten on one side of the country differs substantially from food enjoyed by the other.
Bolivian chicken soup
This recipe is for chicken soup, which is known in Bolivia as "chanko de pollo." You can see from the list of ingredients like this soup is simple, but the taste is really good.
This is a very nutritious recipe and you can do as thin or thick as you like. If the soup is too thin, remove some of the liquid before adding beans, parsley and onions or cube the potatoes and then put back so the starch may thicken the soup.

Boil the chicken in a litre of water with the white part of the green onion for twenty minutes. Boil the beans for 30 minutes in boiling salted water. When the chicken is half-cooked, add the potatoes.
Melt the butter in a saucepan over a low heat and stir in parsley and remaining green onion. Cook, stirring, for a couple of minutes. Take the beans out of the pot and pour the water out. Add to soup with parsley and green onions. Season to taste and serve hot.
Coconut Candy
People who might enjoy this one. Coconut candy is known as cicadas in Bolivia and this recipe is from the region of Tarija. This recipe makes about thirty candies.
Mix three cups of grated coconut with a cup of condensed milk, quarter of a teaspoon of almond extract and an egg in a bowl and let stand for a few minutes.
Spread some butter on a baking sheet and dot small amounts of candy mixture there, with a couple of teaspoons. Bake at 325 degrees f for 25 minutes or until the sweets are dry, smooth and gold.
