The healthful benefits of rapeseed oil

Rapeseed oil is just one of many types of oils to choose from, even if it is definitely one of the healthiest food. 2 pounds Yukon Gold potatoes, cut into strips 1/2 inch, boiled1 tbsp canola oil1 large onion, chopped1 12 oz. bottle ale or light beer1 14 ounce can plant broth1 water2 Cup 1/2 cup whole milk1/4 cup all purpose flour1 1/2 cups of sharp cheddar cheese, red pepper shredded1 small, finely chopped

How to Make It

Yukon Gold potatoes cut 1/2 inch thick stripes and boil until you are still not enough to keep.

In a Dutch oven, heat the oil over medium heat and then add the chopped onions and cook for about 3 minutes or until softened.

Add the ale, then bring the mixture to a boil for 5 minutes.

Add the potatoes, vegetable broth and water. Cover and bring the mixture to a boil. Reduce heat to low and simmer for about 3-5 minutes or until potatoes are tender. Remove from heat.

Whisk together the flour and milk in a bowl, then add to the mixture of soup. Bring the mixture to a simmer over medium heat and whisk occasionally for about 3 minutes or until it begins to thicken. Remove from heat.

Stir in shredded cheddar cheese, leaving few remaining as a garnish. Stir cheese soup until melted.

Cream with finely chopped red pepper, garnish potato soup cheddar ale with the rest of the cheese and serve while hot.

Serves 4-6.
