Make soups with green French lentils

Although there are many to choose from a variety of lentils, French Green lentils are highly regarded due to their taste and firmness even after cooking. French lentils are slightly more expensive than other types, but the extra price can be justified simply because they hold so well after being cooked and offer a great flavor as well.

French Green lentils also take a little longer to cook thoroughly in comparison to other types of lentils. However, they are so versatile and can be used in many different dishes that the preparation time is more worth of final results. This type of lentils also keeps its shape if it is overcooked.

French Green lentils are also known as Puy lentils and lentilles du Puy as they were first grown in France's southwestern region Puy. Even lentils grown in the United States and Italy are still known as Puy lentil due to their "roots". Although called green lentils, are also equipped with stains dark blue.

Because they keep their shape well after cooking, French Green lentils are the perfect addition to soups and salads. These lentils do not need soaked before cooking and their rich flavor peppered pairs and with many other ingredients to make meals hearty and delicious. Just rinse the lentils, then sort through them to remove any remaining stones or debris before adding them to your cooking pot.

If you do not have at hand any French Green lentils and some other varieties can be replaced in a pinch, including beluga or brown lentils, although these two types do not take their shape almost as well.

The lost art of Aspic

I love soups and soups, is to love stocks. A soup is essentially a stock with things added to it. Not everyone, but many stocks are based on the bone marrow. In other words, we use the bones for making stock and what comes out of them is the medulla. Another thing is gelatin made from bone marrow and a rich bone stock is also rich in gelatin, and will congeal when chilled. If one makes a super rich stock, contains enough cord so that mold. And this is the secret behind the gelatin.

An aspic is made by pouring a Commons highly gelatinous into a mold, adding treats it as ham pieces of veal, mushrooms and truffles, perhaps even and chilling it. It was served (I suppose) on a bed of ice covered with leaves of lettuce, or something to hide.

Aspic have been around forever, but that have not been popular all over the United States in over 40 years. In fact, most people find them disgusting (but I bet that those same people have no trouble eating ' jello '). With the advent of refrigeration and fancy cocktail party, aspic were a great success in the 1950s.

Personally, I think Aspic disappeared simply because they were just too damn hard to do. First, the stock had to be impeccably clear; one simply could not serve an aspic cloudy. In addition, it is very difficult to calculate the gelatinous contents of a Commons, because even if you use the same amount of bones, there is bound to be variability in the amount of bone marrow in the bones. The aspic should also be prepared in advance, the day before and finally often failed when released from the mold and broke in half.

Aspic is tasty and beautiful, but more than that it was a badge for the cleverness of the chef in the culinary arts. The 1960s saw a large reduction in snobbery and showman, and we have not seen the aspic from.

Fajita bean soup

I am Queen soup! I love eating soup and do this every day for lunch or dinner or both! One of my favorite recipes that I made up is called Fajita bean soup is delicious! I adore this soup with Mexican style. I think it's my soup families no longer required! They just love.

To prepare to go to the store to get the freshest possible. When you think of Fajitas, which vegetables do you think? I think of red peppers, onions and green peppers. I might even buy yellow peppers if they are on sale, but are normally too expensive and only add color to the soup, so it is up to you, but will not change the flavor with or without them. Buy 2 of peppers and use about 3 large onions. For my flesh I use either ground chicken, 2 pounds, or about 4 large chicken breast cut into bite-sized pieces. Then I buy 2 bottles of Fajita seasoning, preferably McCormicks. Get a mid-size can also chopped tomatoes. You must also have a wide variety of white beans, your choice, around 6 cans and a large box of chicken broth.

Start to cut all the peppers and onions in bite-sized pieces. Put a few tablespoons of cooking oil in a large baking pan and add the meat and chopped bell peppers and onions and garlic if you have some, if not using a bit of garlic powder. Cook until meat is done and put in a pan big soup. Add all ingredients to pan. When you add beans do not drain, pour the entire contents can in the pan. Eyeball the mixture for moisture and if too thick add water. Pour into fajita seasoning. Stir well to get the condiment for all and to make sure that the seasoning doesn't clump up.

Let the soup on the stove to simmer slowly over low heat for at least 4 hours. Control of flavor. If you feel that do not have enough seasoning to add some cumin.

When it's done soup, served with shredded cheddar cheese on it, a dollop of sour cream and tortilla chips broke on top. This is an awesome soup and if you leave out the cheese, sour cream and chip is actually a meal-protein, low-calorie, high. If you have a dinner, or if you have a large family, this should serve 8 persons. You might also want to cut some Cuban bread and serve with soup!

Chicken soup In the West

In kitchens around the world, chicken soup is omnipresent. Is humble, and still is Almighty. Techniques from around the world to prepare the broth are similar, although pot ingredients vary. Here is a brief description of the process in the West:

The best broth is made from whole chickens that have had their flesh removed and cut into eighths. Probably not occur heads or feet, but traditionally are added as well. For a quick rich stock, cooks use all thighs or breasts. Technically there is nothing wrong with this, especially when one is in a hurry. It will deliver a clear, versatile football though. Instead, it will be cloudy and strong smell.

The first order in the process is to bring the pieces of chicken to a boil. When it foams, immediately strain and wash the chicken. Put the chicken back into the pot and fill with cold water.

Then you can start adding ingredients in the pot. Added pot lend subtle flavors for liquor, and they clarify it. As you add will depend on the room in the pot. The chicken will preferably three-fourths of the height of the plate, but there will be plenty of space ' between ' for vegetables in the pot.

Vegetable pot should be washed but unpeeled. Onions can be placed anywhere on the skin and are usually lined with cloves. Carrots and celery stalks with leaves to follow, along with bunches of parsley. Herbs to be added include the bay leaf and thyme sprigs (in moderation) and spices include peppercorns and cloves. Use salt sparingly as it will later tastes.

The rendering of the plate for a period of two hours (adding water if necessary). Simmer the stock; never boil. Strain it and discard the ingredients as you see fit. Scouring by chilling stock. If not, it can be cooled to room temperature can be reduced with gauze cloth. The result should Sparkle, like jelly, be fragrant and delicious ' as is '.

Soup and Mulligatawny soup

A real ' Stone Soup, is the only apparent ingredient, Mulligatawny soup ' soup ' is just a hint of curry powder. Practically speaking, it is commonly served as an appetizer or meal in Indian restaurants catering to foreigners. In this case it is usually the chicken soup with curry spices.

I'm not trying to discredit the authenticity of the soup right off the bat. I had soup and Mulligatawny soup concoction in his East meets West and it's quite good, especially with the addition of fresh curry leaves. If you are ambitious enough to serve a meal, you can make a wonderful soup Mulligatawny soup appetizer, something along the lines of Thai Tom Yam Kung. And it must be remembered that, although this is an Indian dish ' Westernized ', its roots are much Indian-Tamil to be precise. Noting that the British enjoy a soup as an appetizer, soup and Mulligatawny soup curry is basically just an attenuated (and there is no such thing in India as "curry" in any case, even though that's another story).

Mulligatawny soup (' Pepe ' water ' in Tamil) have an origin as a rather abundant lentils curry (although not a dhal), and perhaps a version of it was first served to the British. Noting the preference for British meat, lentils have been replaced by chicken, but the name was left.

I never cooked lentil version of the dish, although the recipes are available should you wish to have a go at it. I love to cook chicken restaurant's version of this delicious soup, and I believe that as Indian as I, Chinese sweet and sour pork (another creation Westernized). If there are any Indian markets near you, you're lucky. Use fresh garam masala (a type of curry powder) to the soup with mustard and fresh curry leaves seedpod if you can get it. Keep it simple stock and drizzle with fresh juice before serving. Add rice, coconut milk and almonds are very good even if you want a hearty dish.

Cream soups: a simple method for cream of anything soup

Cream soups are great. And I'm really versatile! Have a wonderful comfort food, but they're also stylish enough to serve in any part of the dinner. And although there are probably hundreds of cans of cream of anything available at the store, nothing can beat good, homemade cream soups.

Might seem like a cream soup should be kind of difficult, but in reality is anything but. In fact, no matter what type you're trying to do-cream of chicken soup, cream of broccoli, cream of mushroom-you just need to follow an easy method.

So how do you make a big cream soup? Just follow these steps!

Step 1: start with some aromatic plants
A creamy soup is simple elegance-you don't need a hundred different ingredients. But still, even if you are collecting only one ingredient to the star, a pair of shoulders can really add depth of flavor to the soup.

Here's where herbs are vegetables such as celery-, leeks, shallots, garlic or onion. They enhance other flavors rather than overpower them. Sauté some finely chopped herbs in a little oil or butter, and you're done with step 1!

Step 2: the Base and some Stock
Once you've skipped the aromatic compounds, you can add the main ingredient to the mix. This could be, broccoli, mushrooms, asparagus, chicken, or whatever you feel like doing. Simply add it to the pot. If your garden is ideal for sautéing, like mushrooms or asparagus, go ahead and sauté for a few minutes.

Once that is done, you need to add some liquid. Otherwise it is soup! The best choice is to stock: Add a lot more different taste from the water. Chicken broth or vegetable stock are both great. Just enough to cover just add vegetables and simmer until vegetables are soft and cooked.

Once the vegetables are cooked, you can mash the whole thing. A creamy soup is usually smooth and creamy and chopping the vegetables will give you the right consistency.

Step 3: thicken
Part of what makes the custard is thick soups as nice as they are. To give them just the right consistency, you must use a thickener. There are lots of options-a slurry, egg yolks, wheat or potatoes. But I find that a roux works better.

To make a roux, Cook equal parts butter and cornmeal over medium heat until slightly Brown and Smells like wet sand. Every spoonful of flour will thicken a cup or two of puree.

Step 4: a bit of cream to finish the soup
It is not a cream without cream soup! Or at the very least, milk. Once your roux is cooked, you can add milk or cream to the roux. Just pour it slowly, whisking constantly to keep the mixture smooth. Then add the mashed with milk/cream, stir and you're done!

A good guideline is a part of milk for every mashed 2 parts you have, and a little less if you're using cream-can be a kind of rich and heavy.

This method works for almost any soup that you might want to do. Just adjust it to suit your tastes. And don't be afraid to add a little seasoning. A pinch of salt and pepper is always good, but seasonings such as nutmeg, ginger and Basil can make a unique and truly delicious soup.

Mustard soup – how to make the best tasting soup ever!

How to make the best tasting mustard soup, which has amazing flavor.

People who hear the term "mustard soup" will immediately wonder if this may be good. Soup made with mustard?

Well, let me tell you a true story. My brother a sculptor, who lives in the Dutch city of Groningen, took me and my son and the wife of a small restaurant on the side of the country, and ordered the mustard soup. We were not that brave. When he got his soup we were all very curious of course and our clean spoons in his soup to get just a little taste. Well, our preconceived notions and have all vanished immediately ordered mustard soup for ourselves!

If only I could get the recipe was my reaction once I'm back in the States. Certainly I wanted to recreate this soup, did some research and voila, just my recipe was born. The wonderful thing with this soup is that it takes very little time to do, doesn't require a gazillion ingredients and has a lot of flexibility for everything that goes on there (well, of course, as long as we have without exaggeration).

This is what you need:

Water. Start with a small casserole dish, not a gallon and discover you hate!Dijon (or maybe Brown) mustard works better (American yellow mustard would deviate too much from what we tasted). A small vessel will have enough mustard for our today's soup.A shallot or about 1/3 of a Leek (not too), finely chopped or cut. A litre of a finely chopped onion may be added as well (an onion can be fried with Bacon; see below).Salt to taste.A slice of bacon, well done and crushed into small pieces. If this is against your beliefs, skip this step, but I can't vouch for any substitutes, such as beef or chicken).White flour to thicken the soup at the end of cooking (if you are gluten intolerant, with substitute gluten, until they have a slight taste).

After the water is boiling and cooked scallion in there, down low-medium heat and add some salt, then some mustard and Bacon and onion, continue to stir until the soup thickens just a little; don't make it too heavy (easy on flour); only a few slight thickening to soup consistency is more than enough (but no harm done if just a little exaggerated). The amount of mustard to add is totally up to you. I usually start with about 2-3 tablespoons full for a small pot. Add more salt if necessary.

Time involved: it may be 5-10 min, and everyone will rave about it. For larger portions, use more onion, leek, Bacon (or shallots), salt, mustard. Simple enough, eh? Now, it is entirely possible that this small restaurant had some secret, but my imitation nears darn recipe. Remember, the main ingredient is (mustard), so there is no rocket science to get this taste.
